Roasted Cabbage Pot Pie

sort of....

I love chicken pot pie, and when I went to make one the other day I opened the fridge, saw a cabbage staring back at me and thought… hmm. Now this obviously isn’t a pie, but it’s a great way to create the textural experience of a pie without having to do the whole pie thing. It comes together in about 30 minutes - the time it takes the cabbage to roast - and it’s the perfect comforting meal to welcome the colder evenings that are on their way.
