I’ve chased the flavours of the homemade plates of arroz con pollo I had as a kid most of my adult cooking life. The smell fills your home as it cooks and almost instantly reduces my anxiety - I think it must be something I associate with being looked after. I make all types of versions and often come back to this one where I cook the chicken separately from the rice to keep the skin crispy.
